En este segundo tomo, Braudel relata en el capítulo "Los acontecimientos, la política y los hombres" una historia de hechos, de oscilaciones breves. Se llega a la distinción dentro del tiempo de la historia, de un tiempo geográfico, un tiempo social y un tiempo individual. Inicia con la guerra en el Mediterráneo de 1551 y termina con la muerte de Felipe II en 1598.

A partir de la segunda mitad del siglo XIX, la ciencia y la técnica adquirieron una dimensión social que habría de modificar, también, los paradigmas de la farmacia. Fue entonces cuando, con la revolución de la química aplicada a la terapéutica, aparecieron los alimentos-medicamentos, que con los años darían lugar al desarrollo de los preparados dietéticos. Este tipo de productos estuvieron básicamente asociados al mundo de la farmacia.
